Sucré’s king cake adds some sparkle to Carnival season
“It’s been going gangbusters,” says Sucré co-owner Abney Harper about the three-month-old Baton Rouge location of the popular New Orleans-based patisserie. The luxe sweet shop sells elegantly packaged macarons, gelato, French-inspired sweets and, this time of year, king cakes. Made in one size and one flavor—cinnamon cream cheese—they’re gilded with Sucré’s signature custom-made edible glitter.
Harper’s team uses Danish pastry dough rather than traditional brioche, into which they braid a rivulet of cinnamon and cream cheese before baking. “It’s a light and airy dough and a light filling,” Harper says. “It adds delicious flavor and moisture to the cake.” The Sucré Carnival lineup also features king cake-flavored gelato, cupcakes and macarons.
