Dish: Beausoleil Coastal Cuisine’s Truffle Fried Oysters and Oyster Shooters


With a new raw bar and a heightened focus on inventive coastal cuisine, recently refreshed Beausoleil is all about interpreting seafood through a vibrant global lens. The raw bar alone is a playground of briny treats, from a “seacuterie” board to versions of tataki and crudo and even a chilled seafood tower of crab legs, shrimp and oysters.

And since we find ourselves in oyster season, don’t miss the oyster shooters, wherein the delicate, fragrant “shot” is made with sake spiked with citrus froth, avocado pico de gallo, sea urchin butter and tomatillo broth. Elsewhere, the truffle fried oysters—the restaurant’s most popular dish—remains on the menu, proving unequivocally that few things in life are tastier than a lightly battered, perfectly fried bivalve, especially one drizzled in truffle vinaigrette.
